Sweet and Sour Brinjal - How to prepare it in the week-end

Ingredients:

  • ½ Kr Bringal, cut into small pieces
  • 1 Big onion, finally sliced
  • 1 ½ tbsp tamarind, soaked in a cup of water
  • 1 tbsp Jaggery, finally granted
  • 1 tsp ginger, garlic paste
  • ½ tsp jeera powder
  • ½ chilli powder (optional)
  • Salt to taste
Method: Heat oil and fry onion till brown. Add ginger garlic paste, jeera, dhania and chilli powder cook for 2 minutes. Add bringal, mix well and cook for 2-3 minutes. Add 3 or 4 cup water and salt to taste and bring to boil. Lower flame and cook covered till brinjal is solf. Squeeze tamarind, then rub liquid and pulp, through sieve, add to brinjal. Add jiggery and cook, covered, on slow flame till jiggery has melted.
