Chicken cooked with Kumra (white ground)

This is a fine delicay prepared by Bodo community people in Assam, India. In Bodo language this recipe is called as “Dau Jwng Kumara Jwng.”

Ingredients:
  • 500 gms chicken diced
  • 2 cups of white ground (kumra) chopped
  • Paste of 1 big onion, little ginger, 12 pods of garlic, green chilli chopped
  • A few bay leaves, 1 tsp turmeric, 1 srp powder cardamon + cinnamon + clove
  • Salt to taste
  • A bunch of fresh coriander chopped
  • 1 tbsp oil
Method: Heat oil and fry chicken with all the above ingredients except fresh coriander. Keep cooking covered, in low heat, stirring occasonally. Remember, chicken and the Kumra must be cooked without adding water. Sprinkle chopped coriander and serve with hot rice.
