Orange and Beetroot Salad

Ingredients:
  • 6 Beetroots (medium size) cut into ½ inch cubes
  • Juice of 1 orange
  • Salt to taste
  • Sugar to taste
  • Pepper to taste
  • Sliced onion 2 cups
  • Lettuce Leaves and Orange pips for garnishing
Method:
  • Cut beetroot into ½ inch cubes and boil it. Strain the waer and keep aside.
  • Mix the fresh juice of one orange and add salt, sugar and pepper.
  • Add to the beetroot and serve on a bed of fresh lettuce leaves garnished with finely sliced onion and orange pips.
