Prawn Soup

Ingredients:
  • 1 Onion finely chopped
  • 1 tbsp oil
  • 1 potato peeled and finely chopped
  • 300 grams frozen sweetcorn
  • Chicken or vegetable stock fresh, cube or concentrate, made up to 750 ml
  • 200 grams peeled prawns
  • A small handful of coriander, chopped
Method: Fry the onion in a non-stick pan with a little oil until soft, add the potato and sweetcorn and season well. Add the chicken stock and bring to a boil, cook for 10 minutes and then add the prawns and bring back to the boil. Stir in the coriander.
