Raisin - Apricot Pudding

Ingredients:

  • Maida 1 ½ cup
  • Sugar 1 cup
  • Refined oil 4 tbsp
  • Vinegar 2 tsp
  • Milk 1 cup
  • Baking powder ½ tsp
  • Soda ½ tsp
  • Raisins (chopped) 1 tbsp
  • Apricots (chopped) 1 tbsp
  • Water 4 tbsp
  • Cardamom powder 1 tsp
Method: Heat raisins and apricot in water with 2 tbsp sugar. Set aside to cool, after sugar melts. Mix milk, the rest of the sugar, vinegar, oil. Mix soda and baking powder with the maida. Fold in the maida over the milk mixture. Sprinkle cardamom powder. Top it with the raisins and apricot and bake for 20 minutes or till the cake sets. Serve with cream.
