Colocasia stem cooked with jack-fruit seeds


A delicious recipe ‘Colocasia stem cooked with jack-fruit seeds’ which is called in Assamese as ‘Kothal gutir logot Kasu Thariranja’ is the mostly loved curry in the households in Assam in the season that jack-fruits are available. Here let us see how to prepare it.


Ingredients:
  • Edible Colocasia stems 2 medium size, peel off the outer thin skin,wash and cut into small pieces
  • 1 cup, peeled washed jack fruit seeds (cut them into two pieces)
  • 2 onions chopped
  • 1 tomato (chopped)
  • 1 tsp. of ginger garlic paste
  • 1 tbsp. of mustard Oil
  • Salt to taste
  • 1 tsp of Turmeric powder
  • 1 tsp cumin powder
  • 1tsp mustard paste
  • 2-3 chillies
  • 1/2 tsp black pepper crushed

Directions:
  • In a pan add mustard oil
  • Add chilli, garlic ginger paste and chopped onion...
  • When the mixture turns light brown add tomato pieces, turmeric powder,cumin powder and salt. Mix well and cook them till tomatoes become pulpy
  • Now add pieces of colocasia stem and jack-fruit seed
  • Cover cook them for about 10 minutes;
  • Now add mustard paste, black pepper and 1 cup of water and let it cook for 10 minutes or till seeds become tender.
  • Serve it with steamed rice.
