KORDOI PITHA




Ingredients:
·         Maida: 1 cup
·         Refine oil for frying
·         A pinch of Baking soda
·         A pinch of salt
·         Luke water to make the dough


For the sugar syrup:

  • 1 n 1/2 cup sugar
  • 1 cup water
Method:
  • Mix Maida, salt, 1-2 tsp refine oil, a pinch of baking soda in a large bowl. Add lukewarm water to it and make soft dough. Keep the dough covered for about 20 minutes.
  •  After 20 minutes take the dough and   make small balls and roll out each ball as like we make luchi.
  •  Now with a pointed knife make long slits as shown in the picture. Don't cut through the ends.
  •  Hold both the ends and press with your fingers. 
  •  Now in a hot pan add oil and on medium heat carefully deep fry the pithas 2-3 at a time till they turn into golden brown colour. Keep the all fried pithas aside.
  •  Now to make the sugar syrup brings the water to a boil.
  • Dissolve the sugar into the boiling water, stirring constantly.
  •  Once the sugar is dissolved completely, remove the pan from the heat.
  • In the prepared hot sugar syrup dip the pithas and leave them about 10 to 15 minutes.
  • Remove them from the syrup, once pithas become cool serve it with a hot cup of tea.
