RICE CAKE MADE IN KETTLE


Ingredients:
Freshly ground rice powder of 1k.g. (Soak the rice over night or minimum 3-4 hours. Before grinding, wash rice and keep for an hour so that the water drains out)
  • Grated fresh coconut 4cups
  • Jaggery 2 cups (or according to you taste)
  • A pinch of salt
  • Warm water
Method:
  • Take grated coconut and mix with jaggery and a pinch of salt. Keep aside
  • Now sprinkle little water into the rice powder adding a pinch of salt and
  • with the help of a sieve ,sieve the mixture .
  • Take a kettle and fill 1/2 with water. Bring it to a boil.
  • In the kettle lid carefully stuff the coconut jaggery mixture by layering a layer of rice flour than coconut jaggery mixture than again a layer ofrice flour
  • Cover the rice mixture with a clean muslin cloth
  • Tie the ends securely and place the lid back on the kettle.
  • On medium heat steam it for for 3-4 minutes
  • Gently remove from heat and unwrap the rice cake (Pitha) onto a plate.
  • Enjoy the Pitha with a cup of hot Assam tea.
